What is and why a TTI?

 

Monitoring a temperature threshold over a certain period of time is just not enough.  A full history TTI is required.  For example, the growth of  C. bot.  in seafood at 25°C is exponentially more rapid than at 5°C; so you need a tool to measure time and temperature together, to receive accurate validation.
